Recipe: Classic Pancakes

- Preparation time: 30 mins

Ingredients:
Crepes:
- 200g flour
- 30g of sugar
- 1 vanilla pod
- A pinch of salt
- ½ tsp cardamom
- Grated zest of ½ lemon
- 3 eggs
- 350ml whole milk
- Butter for frying
Sauce:
- 80g sugar
- 30g butter
- 200ml freshly brewed black coffee (freshly brewed)
- 40g brown sugar
- 1 vanilla pod
- 100g blackberries
- 50g blueberries
- 50 g crushed hazelnuts, lightly fried
- Maybe a handful of sour red meadow flowers
This is what you do:
- Cut the vanilla pod in half and scrape out the seeds. Save the stem for later use.
- Mix the flour, sugar, vanilla sugar, salt, cardamom and grated lemon zest in a bowl. Add the milk while stirring.
- Add one egg at a time while whisking. Whisk well. Leave the dough in the fridge for an hour.
- Prepare the grill for direct heat, 200°C. Place the pan on the GBS grid and heat it.
- Put butter in the pan and brown the pancakes one by one, turning them once. Add more butter if needed. When the pancakes are cooked, fold them into triangles and cover them.
- Lightly caramelize the sugar in the pan, add the butter and vanilla pod, and bring the butter to a simmer, stirring. Add the coffee and brown sugar and simmer until the sugar has melted. Let the caramel reduce a little for a thicker consistency.
- Place eight pancakes in the caramel sauce and heat gently, turning once. When the pancakes are hot, add the blackberries and blueberries, and heat quickly.
- Place the pancakes on a plate and decorate the pancakes with berries and sorrel flowers, or serve straight from the pan.
- Before serving, sprinkle chopped hazelnuts over the pancakes.

French toast:
- 4 slices of toasted bread
- 2 eggs
- 2 tablespoons of milk
- 30g butter (for frying)
- 2 tablespoons of sugar
- 1 teaspoon of cinnamon
- Maple syrup
Apricot compote:
- 250g dried apricots
- 4 DL of water
- 1½ tablespoons sugar
- 2 juicy oranges

This is what you do:
In the kitchen
French toast:
- Mix milk and eggs together. Flip the bread slices in the mixture and let them “soak” – preferably a few hours if you have the time.
- Mix sugar and cinnamon.
Apricot compote:
- Cut the apricots into strips and place them in a saucepan with water and sugar.
- Cut the oranges into boats. Cut the flesh from the barks along the edge so that they come off without the hull joining – save the juice.
- Cut the orange fillets into small pieces. Turn the fillets in the apricot juice and puree. Season with lemon juice.
On the grill
French toast:
- Prepare the grill for direct, high heat, place the pan in the GBS® grate and heat the pan for 5 minutes. Fry the buns in butter in the pan until golden brown.
- Sprinkle with cinnamon sugar.
Apricot compote:
- Put the pan with the mixture on the grill and cook for about 12 minutes until the apricots are crushed.
- Serve the toast with the maple syrup and the apricot compote.
- Tips! If necessary, toast the buns for a short time on the grill grate before placing them in the egg mixture, so that they have grill marks.

Ingredients:
- 5 dl of water
- 3 teaspoons of salt
- 15g yeast
- 625g wheat flour
This is what you do:
In the kitchen:
- Mix water, salt and yeast. Add the flour and mix the dough a little. Place plastic wrap over the dough and let it sit at room temperature for about 10 hours. Pour the dough onto a flour covered table when the dough has risen. Fold it in three joints – first from one end to the other.
- Place it on an oiled dish or flour-covered table, cover and let rise for another two hours.
On the grill:
- Prepare the grill for indirect high heat, about 250°C. Preheat the pan on the grill for about 15 minutes, so that it becomes nice and hot. Place the dough in the hot skillet. Put the lid on the pan and place the lid on the grill.
- Bake the dough for 30 minutes with a lid, then 15 minutes without a lid.

- 1⁄2 kg boiled potatoes
- 1 onion
- 2 baked red peppers
- 1 dl of cream

This is what you do:
In the kitchen:
Cut the potatoes into small cubes. Peel the onions and cut them into small cubes. Cut the peppers into strips. Whipped cream, milk, eggs, salt and pepper.
On the grill:
Prepare the grill for the 50/50 grill method. If using a charcoal grill, use the equivalent of a grill starter with prepared briquettes. Place the pan on the grill over direct heat, and brown the tender onion in a little butter. Add the potatoes and peppers and cook for a short time. Then pour the egg mixture over it, move the pan to direct heat and place the lid on the grill. Grill the omelet until firm and serve immediately. It takes about 20 minutes.
