Grilled broccoli pizza – NRK Mat – Recipes and inspiration

Pizza dough

Use a dough hook if you have one to make pizza dough. Mix water, oil, sugar and yeast until dissolved, then add salt and flour (not all at once). Let the machine knead at low speed for about ten minutes, until the dough is firm and thin. Adjust with flour and water to achieve desired consistency. It should drop the bowl easily. Leave the dough to rise for an hour under plastic, before dividing it into pieces which are kneaded lightly and shaped into bowls. Use your hands to shape the pizza bases.

Tomato sauce

Finely chop the red onion, simmer in a sip of olive oil and a pinch of salt until tender, then add the finely chopped garlic and a pinch of chili flakes. Put the canned tomatoes, rinse the can with water and simmer for 10-15 minutes. You can prepare the tomato sauce the day before and leave it cold.

Grill broccoli pizza

Roll out the pizza dough. You can use parchment paper underneath on pizza stone/steel, or without. Make thin pizza bases and add a thin layer of tomato sauce. Divide the broccoli into thin slices, and arrange them on top, as well as the pine nuts. You add basil, salt and pepper after cooking.

When grilling pizza, you need a high heat grill and a lid. Preferably more than 250 degrees. It’s a good idea to leave the pizza stone in the grill while heating, so it’s really hot when you put it on the pizza.
If you are using a gas grill, turn off the burner which is directly under the pizza stone when you put the pizza down.

The pizza is ready when she drops the stone, it takes less than ten minutes.
