Grandma’s Mushroom Cake

Use a round shape 22-24 cm

What do you need:

  • 4 eggs (size M or L)
  • 2 cups of sugar = 175 g (can be reduced to 150 for a little less sweet) or 1 1/4 dl
  • 2 cups of flour = 140 g or 1 ¼ dl
  • 6 tablespoons of water
  • 2 teaspoons of yeast

This is what you do:

Stir in the egg yolks and half the sugar until thick and fluffy. Add the boiling water and the rest of the sugar while whisking. Sift the flour and the baking powder and finally mix in the well-beaten egg whites. Pour the batter into a buttered mold and bake in a moderate oven for approx. ½ time.

Wench’s tips:

Baking temperature 150 degrees, 40-45 minutes until cake is lightly browned and cooked through.

Best Simple Spice Cake Recipe Without Eggs

(Without milk, replace butter with margarine. Without milk and kefir with 2 cups of soy cream and soy/rice milk up to 1 litre)

What do you need:

  • 200g melted butter
  • 1 liter of kefir
  • 250-300g sugar
  • 625g wheat flour
  • 4 teaspoons baking soda
  • 2 teaspoons of cinnamon
  • 2 teaspoons of cardamom
  • 2 teaspoons of cloves

This is what you do:

Melt the butter/margarine and stir in the kefir (optionally soy sour cream + soy milk) and sugar. Mix the rest of the ingredients and fold into the batter.

Pour into a small long greased/lined baking pan and bake in a hot oven, 175 degrees for approx. 40 minutes, on lower furrow. Allow the cake to cool slightly before unmolding. The cake stays juicy and moist without freezing, but also lends itself well to freezing. Cut into chunks and serve plain or with a little whipped cream and berries on the side. This cake is also delicious with a good piece of blue cheese.
