This dish is taken from “Godt.no” and was a big hit with host Peter and his 5-year-old twins. The dish is ready in 20 minutes!
What do you need:
- 800g skinless, boneless salmon fillet
- 2 tablespoons of butter
- 2-3 finely chopped garlic cloves
- 4 tablespoons of honey
- 4 tablespoons soy sauce
- 1 tablespoon chili sauce, sriracha (hot chili sauce)
- 1 lime
- 1 handful of herbs (coriander, parsley or chives)
- 1 cauliflower, cleaned and shredded in cauliflower rice
- About. 200g spinach
- 1 tablespoon olive oil
- Salt, coarsely ground pepper
- Maybe peanuts
This is what you do:
Cauliflower rice: Remove the green from the cauliflower. Grate the cauliflower on a crudité star, until the cauliflower rice. Clean and prepare the spinach.
Cut the salmon fillet into 4-5 equal pieces and season with salt and pepper.
Heat the butter in a frying pan and quickly fry the salmon pieces on both sides. They must not be overcooked, the heart still raw. Collect the pieces of salmon and place them on a plate.
Add the finely chopped garlic and simmer over medium heat for 1-2 minutes before adding the chili sauce, honey, soy sauce, lime juice and 1-2 tablespoons of water. Bring to a boil and boil together in a rich sauce, it goes fast.
Return the salmon pieces to the pan and pour the rich sauce over the salmon pieces.
Brown the cauliflower rice in a pan with olive oil, 2-3 minutes over medium-high heat. Season with salt and pepper and optionally add some chopped herbs.
Saute spinach over high heat until wilted, stirring with a clove of garlic tied to a fork. Season with salt and pepper.
Spread fried cauliflower rice, spinach and salmon on plates. Sprinkle with chopped peanuts (lightly fried in a pan) and pomegranate seeds.
