Italy is one of Norway’s favorite holiday countries. Many travel for the warm weather, blue seas and beautiful beaches – but just as many travel to experience authentic Italian cuisine based on good ingredients.
But when a pandemic manages to hamper this year’s Italian summer vacation, it’s all about creating solutions at home. Fortunately, it’s not that difficult: with a few good recipes and good friends available, it’s a short way to a taste of Italy.
– Italian cuisine has many dishes that are easy to recreate in Norwegian kitchens says department head Torunn Nordbø at the Information Office for Bread and Cereals in a press release.
– Focaccia, bruschetta, grissini, ciabatta and biscotti are just some of the Italian specialties with which you can create a holiday mood, she continues.

Focaccia is Italian toast with garlic, red onion, rosemary and parmesan cheese, a perfect side dish for dinner. Serve with a barbecue or enjoy on its own with a good oil or an aioli.
